🍁A Welcoming Fall Porch and an Easy Comfort Meal in One Dish to Chase Away the Chill 🍂

My front porch set for fall visitors…IMG_3624If you saw my last post, then you saw the morning glory vine on the front porch, in which this photo is taken from…a comfy place to sit on a sunny fall day.IMG_3619A closer look at the fall arrangement…IMG_3614And an even closer look, with white and deep red mums, a pale peach color pumpkin in the center, cabbage plants are worked in with pumpkins and large gourd…

Chicken and Rice Casserole with Vegetables…An easy one pan meal for a cold night…it will warm up your house with an aroma of Thanksgiving…

IMG_3593All the ingredients arranged to prepare this meal…

1.  Any chicken pieces that you like…I used 2 boneless breasts, 4 boneless thighs and 3 chicken legs, all skinless.

2.  1 1/2 cups of brown rice

3.  3 cups chicken broth

4.  6 carrot sticks, cut into large chunks

5.  6 celery stalks, cut into large chunks

6.  1 large onion, sliced into wedges and separated

7.  5 oz bag of fresh baby spinach

8.  2 tablespoons of Bell’s Seasoning

Salt and Pepper to taste

Preheat oven to 375 degrees.  Scatter rice on the bottom of a 13″ X 9″ dish that has been sprayed with vegetable spray, layer chicken on top, scatter the vegetables between and on top of chicken, pour in chicken broth and sprinkle seasonings on top.  Wrap tightly with foil that has been sprayed with vegetable spray so it won’t stick to the top.  Cook in oven for 1 hour, open top carefully and spread spinach on top, cook for another 15-20 minutes or until rice is soft and creamy and chicken is cooked but moist.  Let stand for 5 minutes, turn back the foil and enjoy!!

    1. Thank you Lisa, I enjoy decorating my porch for the seasons!! The Bell Seasoning in this dish fills the house with Thanksgiving aroma…and I forgot to mention that cranberry sauce goes lovely with this meal too!!

  1. Looks like Fall has hit New England! Your recipe looks yummy! I make a chicken casserole similar to yours but I use cream of chicken soup instead of broth and I don’t add carrots or spinach. I’ll have to try your recipe when it gets cooler. Still swimming weather here! 🏊

      1. You can also use cream of mushroom soup (Art doesn’t like mushrooms! ), but I find that good too. The creamy soups make it stick-to-the-ribs comfort food. That’s why I love N.C.. The pool is open till the end of month and opens the beginning of April. Of course, there’s a HUGE pool called the Atlantic Ocean not that far either! Hope you’re doing well.
