My front porch set for fall visitors…If you saw my last post, then you saw the morning glory vine on the front porch, in which this photo is taken from…a comfy place to sit on a sunny fall day.

Chicken and Rice Casserole with Vegetables…An easy one pan meal for a cold night…it will warm up your house with an aroma of Thanksgiving…
All the ingredients arranged to prepare this meal…
ONE PAN MEALโฆCHICKEN AND RICE CASSEROLE WITH VEGETABLES
INGREDIENTS
1.ย Any chicken pieces that you likeโฆI used 2 boneless breasts, 4 boneless thighs and 3 chicken legs, all skinless.
2.ย 1 1/2 cups of brown rice
3.ย 3 cups chicken broth
4.ย 6 carrot sticks, cut into large chunks
5.ย 6 celery stalks, cut into large chunks
6.ย 1 large onion, sliced into wedges and separated
7.ย 5 oz bag of fresh baby spinach
8.ย 2 tablespoons of Bellโs Seasoning
Salt and Pepper to taste
INSTRUCTIONS
Preheat oven to 375 degrees.ย Scatter rice on the bottom of a 13″ X 9″ dish that has been sprayed with vegetable spray, layer chicken on top, scatter the vegetables between and on top of chicken, pour in chicken broth and sprinkle seasonings on top.ย Wrap tightly with foil that has been sprayed with vegetable spray so it wonโt stick to the top.ย Cook in oven for 1 hour, open top carefully and spread spinach on top, cook for another 15-20 minutes or until rice is soft and creamy and chicken is cooked but moist.ย Let stand for 5 minutes, turn back the foil and enjoy!!
Scatter rice in bottom of dish…
Add vegetables between chicken and on top…
Cover tightly with foil and pop in the oven…you’re house will smell like Thanksgiving,,,
But this is easy and so yummy!!!
Theย chicken is tender and moist, the rice is creamy and the vegetable, cooked to comfort food perfection!! ย ENJOY!!!

Your fall decorations are so beautiful. Your porch looks so inviting. I can only imagine how wonderful your house smells while cooking that delicious chicken dish. I have pulled chicken out for tomorrows dinner. ๐

Thank you Lisa, I enjoy decorating my porch for the seasons!! The Bell Seasoning in this dish fills the house with Thanksgiving aroma…and I forgot to mention that cranberry sauce goes lovely with this meal too!!

Looks like Fall has hit New England! Your recipe looks yummy! I make a chicken casserole similar to yours but I use cream of chicken soup instead of broth and I don’t add carrots or spinach. I’ll have to try your recipe when it gets cooler. Still swimming weather here! ๐

You can also use cream of mushroom soup (Art doesn’t like mushrooms! ), but I find that good too. The creamy soups make it stick-to-the-ribs comfort food. That’s why I love N.C.. The pool is open till the end of month and opens the beginning of April. Of course, there’s a HUGE pool called the Atlantic Ocean not that far either! Hope you’re doing well.
