Vegetable Soup for Mom and PB&J in a Bowl for Me…

IMG_6721Every Tuesday I bring soup to my mom…I bring enough to last most of the week and some for my sister, Marilyn, as we switch taking care of my mom…I make it on Mondays…this day I made

 vegetable soup…it is easy to make and nutritious for a fragile elder…or anyone on these cold days of February

Healthy Vegetable Soup

2 32oz of vegetable broth
1 celery heart cut into 1 inch pieces
1 16 oz package of small ready to use carrots
1 medium onion diced
1 15.5 oz can of cannellini beans
1 tablespoon of dried thyme
1 tablespoon of marjoram
1 bay leaf
Salt and pepper to taste
1 cup frozen peas
2 cups frozen spinach
Soup pasta of your chose (I like mini bow ties) cook and store separately, I just add it when serving

Add broth to a large pot and all ingredients except peas, spinach, and pasta. Bring to boil, then simmer until carrots and celery are soft, add spinach and peas and bring to boil then shut the heat off. At this point, you could either serve with pasta or freeze or refrigerate.

IMG_6740Nice hot soup on a cold February day with Trader Joe’s Fig and Olive Crisps…img_6973But this is what I eat for lunch, most days…nuts and grapes!!! This is like a peanut butter and jelly sandwich, only better!! The Rice Chex are like the bread, but they are gluten-free, the cashews, Brazil nuts, and pumpkin seeds take the place of peanut butter and the grapes and raisins are similar to jelly…and a little dark chocolate for dessert, it’s healthy with lots of antioxidants!! This lunch is easy to pack…I eat lunch away from home most days…and I look forward to eating this lunch, especially the chocolate!!
