Maple-Roasted Chicken with Sweet Potatoes
This is a yummy, easy, one dish meal for these busy days… Throw this together and put it in the oven, the smell will be divine while you are wrapping, decorating and/or cleaning or even better give the recipe to someone in your home who isn’t as busy as you:)
INGREDIENTS
8 Chicken pieces ( I used 3 boneless breasts, 3 boneless thighs, 2 legs)this is enough for two people with leftovers.
1 Yellow onion, cut into 1 inch wedges
5 Celery stalks, cut chunky
2 Sweet potatoes, cut into wedges
3 tablespoons olive oil
1 teaspoon salt
1/4 teaspoon pepper
2 teaspoon dried thyme
4 tablespoons maple syrup
Combine last 5 ingredients in a large bowl.
Toss chicken and vegetables to coat with liquid.
Put in casserole dish that has been sprayed with vegetable spray. Cook uncovered for 1 and half hours or until chicken is cooked and vegetables are nicely roasted brown. Baste a couple of times while cooking, just with a tablespoon is fine, no need to get a baster dirty.
I enjoyed this with a salad made of butter lettuce, scallions, dried cranberries, pumpkin seeds and dressing of olive oil and blackberry and ginger balsamic vinegar from LeRoux. Don’t forget the wine, to me it isn’t important what kind as long as it’s wine, but it’s important to Victor, so this one is 2015 Black Birch Vidal Blanc… Enjoy…Relax…
